Chicken Rice
A fast, satisfying dinner made with simple supermarket ingredients and plenty of flavour.

Method

Cook the chicken goujons in the oven according to the packet instructions until golden, crispy and piping hot.

Cook the rice in lightly salted water until tender. Drain if necessary, cover and keep warm.

Heat a little oil in a frying pan over a medium-high heat. Add the sliced onion and cook for 3–4 minutes until it begins to soften.

Add the diced garlic, spring onions and chilli flakes. Stir-fry for another minute, taking care not to burn the garlic.

Add the Sriracha sauce and toss everything together until the onions are evenly coated.

Slice the cooked chicken goujons, add them to the pan and toss for 1–2 minutes until coated in the hot and spicy mixture.

Spoon the rice onto a plate, top with the chicken mixture and finish with extra sliced spring onion and a drizzle of Sriracha.
